Hey! Are you ready for another Party??

Randi, Matt and Baby Nolan came to visit this weekend … I decided to splurge a ‘little’ and booked them at the DoubleTree GalleryOne Hotel down the street. I’m glad I did! They enjoyed the room with an awesome view, mini kitchenette and plenty of room for the people coming and going to visit! I spent Saturday by the pool and played tourist. Just what I needed!

The condo project is NOT moving as fast as I’d like … we have the cork flooring down but now must wait for the inspection to lay the actual flooring down. Plumbing should be inspected this week so hopefully the showers can get done. And so much more … hurry up already!

Mark is back on his pills this week … the one week off really wasn’t all that special … boo.

Lemon Garlic Chicken – Slow Cooked

I picked up a few (4) packages of boneless skinless thighs a few weekends ago from Target … they were on sale for $3.99 AND had a $2 off coupon … well of course I snagged them! I was polite and left a few packages behind because, you know, I’ve got a chest freezer and a malfunctioning refrigerator … which will be fixed this week, thankfully. And the quote makes me glad I bought some cheap chicken because it’s a LOT to fix a 30 plus year old SubZero fridge … good grief!

Ok, so I had all the ingredients thanks to a little stop at Aldi Saturday … and I made this on Sunday in the crockpot!

*Can I just tell you how HARD it is to take pictures in this house??

2 pounds of boneless, skinless chicken thighs

2 lemons (1 sliced and the other zested and juiced)

1/2 cup of water (chicken broth is recommended)

1 tsp basil

4 to 6 cloves of garlic, peeled and smashed

1/4 tsp black pepper

generous sprinkling of season salt of choice (I used Onion Salt)

1 onion, sliced

Add the onions to the bottom of the crock. Toss the chicken thighs on top of the onions.

Add the rest of the ingredients over the top of the chicken, making sure you season the chicken heavy with your season salt.

Add the lemon slices over the chicken. Put the lid on, cook on high for 2 to 3 hours OR 4 to 6 hours on low.

Once cooked, pull the chicken out of the crock and either slice or shred. Hopefully it’s not falling apart too much on you!

Yup, different time I cooked it … leave the lemons halved or sliced, it’s your call!

Serve with some yummy herbed riced cauliflower (or regular rice if that floats your boat!)

We have the flooring, tile for showers AND the bathroom vanities picked out! Now I’m getting excited! We spent Saturday shopping for the vanities and then Sunday cleaning the condo … simply sweeping the dust (concrete and drywall) and picking up the little pieces of drywall and concrete. It was dirty work and we were a mess by the time we finished, but felt that we helped the workers a little bit …

Thank you for sticking with me through this move … it’s not been easy and has been more stressful that I admitted out loud! BUT I’m trying to get settled in hopefully once we have the cable and internet running to full capacity, things will fall in place 😉

Parchment paper saves the day

Did you see the awesome wing recipe I shared on Saturday? I had made these for Mark when he was coming home on Sunday and they were a HIT! Yummm … so much so that I think I need to make these once a week now!

Mark is doing good … this is his 2nd on week right now for the pills. Monday, Tuesday and especially Wednesday were hard last week. Tired, achy and just felt like crud. Wish I had known as we went out to dinner with an old friend that we hadn’t seen in a while. We closed the place down and then some but what a great time. The conversations were all over the place and we learned some stuff for another family issue in the works. I think we need to make this a monthly date as I really enjoyed our time with him (an old business acquaintance of Mark’s that we’ve stayed in touch with who has become more of a friend and mentor).

I’m not going to complain about the house this week! We got the fridge fixed! Yes!! I may be able to get back in to my cooking, happy place now! Sweet!  And then it started to freeze up again so I need to call the company back. Boo!

After 4 plus hours in the Floor & Decor, we finally picked out the flooring for the condo and the tile for the showers. Ugh, that was painful! I don’t know HOW people find remodeling joyful??

Gold Chicken Wings – Slow Cooked

These are the BEST! The very very BEST!

THIS is what I have to work with … and then I have this thing staring at me as well:

Ok, so these wings? I got the recipe over at MadeItAteItLovedIt … and you really need to go check her site out, ok?

2 pounds of chicken wings that have been split. I used some from my 10 pound bag I bought from Costco eons ago and are taking up a big chunk of that damn chest freezer

1 cup of mustard based bbq sauce. I used Trader Joe’s Carolina Gold … *mustard base is NOT sweet so it needs to be this type!

1 tbs of hot sauce, give or take a few extra shakes depending on how hot you like it! I used the Tessemaes Buffalo Sauce because I can’t find my Aldi knock off of Franks (still unpacking folks)

Salt and pepper

Ready?

Toss the wings in the crockpot.  Measure out your bbq sauce and add the hot sauce to that. Mix it up.

Pour it over the chicken wings.

Put the lid on and set it to 6 hours on low.  Ok, so truth be told, I cooked mine for a few hours on high and then knocked it down to low because I got distracted that morning by a girlfriend who came by …

Once cooked, lay the wings out on a baking tray, preferably lined with parchment paper to reduce your clean up headache and either bake at 400 degrees or broil til crispy and golden brown. *The oven we have here in the temporary house does NOT have a broiler. What? No freezer?? No broiler?? Hence, I baked for 5 minutes, flipped and baked again. Yummy results!

Serve up with some celery sticks and blue cheese or ranch dressing. Or just skip that fancy stuff and dig right in!

I had 8 bottles of this when we were packing the kitchen before we moved … great soy sauce  alternative!

Did you see the Unrolled Egg Roll recipe I shared on Sunday? It’s really good and I highly recommend it!

Mark was off his meds this week, thankfully since he ended up driving to Ocala to help his sister move to Indiana Thursday and Friday … and flew back home on Sunday. So honestly, we have no idea if he feels better or not since it was a quick, whirlwind road trip and little sleep … he’s back on as of Sunday morning so here we go for the next two weeks!

Had a refrigerator guy come out on Saturday since Mark was gone and I was just going to pay to fix the fridge … but they have to order the part so that will be done on Wednesday … I HOPE!

I had a girlfriend come by Sunday morning. She got the heebie jeebies in the house … it’s old, dark, big furniture and yes, a little creepy, I admit it! But I think I’m getting used to it … sad as that may be!

UnRolled Egg Roll

For years, and I do mean YEARS, I would turn my nose up at egg rolls … I mean, seriously, it was a fried, greasy “thing” filled with icky cabbage, carrots and protein. Oh, wait … are there eggs in there?? I honestly don’t know but I can count on one hand the number of times I’ve taken a bite and just said NO THANK YOU.

Crazy, I know!

I was just never a fan of them … they were overly fried, borderline cold and again, that icky cooked cabbage stuff ::shudder::

Then along came Whole30 a few years ago … and I discovered a ‘few’ things that I might like after all! Imagine that!

Yup. I can tolerate cooked cabbage so long as it’s  not a wimpy, hot mess! Hence, this dish was perfect!

Yes, I have tried to do a Whole30 several times. And failed each time. Just not my thing. You know, things happen, the random beer appears, etc. See, it’s the booze that always gets ME off track. And I have not excuse other than, it’s just the way it is.

But this dish? It sticked around even after those numerous failures of a full 30 days of clean eats. Because it’s really yummy! And even Mark likes it 😉

1 bag of tri-color slaw (cabbage,carrots, red cabbage mix) *don’t use the angel hair mix!

1/4 onion, diced

smashed clove of garlic

1 tbs avocado oil (coconut oil or olive oil is fine)

1/3 cup Coconut Aminos OR Coconut Aminos Garlic Sauce*

1 tbs sesame oil

cooked protein of choice. I’ve used shrimp, chicken and pork, all are yummy! YOu can skip the protein if you want

2 green onions, sliced thin

*if you are not opposed to soy, then by all means, use soy sauce … just know that I’m on the train that says soy is bad*

Heat the oil in large skillet over medium heat. Take my advice and use a larger skillet than you think you need. Toss in your cabbage mixture with onion and garlic and saute til soft.

Add coconut aminos and sesame oil and saute a little longer to absorb some of the liquid. TIP: measure all in a measuring glass and be ready to just dump and go!

Add your protein of choice (if using ) and garnish with green onions and eat up!

Hey! Are you ready for another Party??

Did you all have a good Labor Day Weekend?? We rented a cute little Jeep and drove it across the alley on Saturday morning. When we left, there was a simple “wave” that had 20% chance of forming into anything more serious. Imagine our surprise on Monday morning to see Tropical Storm Warnings and Watches out!? Lots of rain on that drive home but we made it safely and here we are, another week in!

The temporary house had a few minor roof leaks, not surprisingly to us. As Jamie said, it rained pretty darn hard here so yeah, I’m sure a lot of folks found some roof leaks! On the chemo front, this is Marks week off and he’s looking forward to feeling good again for a little bit. Come Sunday morning, it’s time to start popping those pills again.

Did you see the BBQ Beef recipe I shared on Friday?? It’s delicious and I’m looking forward to making it again real soon! BUT FIRST, I need to get the refrigerator defrosted and try and get it serviced so it runs a little more efficient! 😉

BBQ Beef Crockpot Style

You know our temporary housing didn’t have a freezer? All we had was a mid-80s SubZero refrigerator. That worked at about 60% of it’s capacity. And that I was not impressed with. So I made Hubby take me to Best Buy and I got a small chest freezer.

THIS was a huge transition for me! Coming from a 3 freezer home to a ZERO freezer home and THEN a small chest freezer. Whee things were challenging.

The number ONE challenge with a chest freezer is everything goes SOUTH and to the bottom in no time flat. Oh joy.

So when I saw Mary shared this recipe on her site at Sweet Little Blue Bird, I was all about digging out these 2 lovely hunks of beef I knew were in the bottom of said chest freezer.

It was worth the frostbitten fingers and mosquito bites galore.  And I’m glad I opted to keep the LARGE crockpot out of storage!

4 pound beef roast

1 1/2 cup ketchup

2 tbs worcestershire sauce

1/4 cup red wine vinegar

1/4 cup brown sugar

2 tbs grey poupon

1 tsp liquid smoke (I remember telling Hubby we had FOUR bottles of this stuff and I could not locate ONE! I finally opened another box and there they were!)

1/4 tsp garlic powder

1/2 tsp black pepper

1/2 tsp salt

Mix all your sauce ingredients together. Toss the roast in a large crockpot, pour the sauce over the top and turn that bad boy on high for 5 hours or low for 8 hours. I got a late start that Sunday morning so it was high for 5 hours which was PERFECT!

You can either shred your beef or slice it. 9 times out of 10 you will need to shred it as it will be falling apart.

Skim the fat stuff off the top of the juice. The juice will be super thin.I wanted a thicker gravy style so I sprinkled a little over a tablespoon of Wondra over the top, stirred it in and added the beef. Turn the setting to low for 30 minutes or so and let the beef warm up again and you will have a nice beefy gravy thing going on!

When I can’t find the fluffy cat, I just need to look up. She’s discovered the ledges around this house now.

Originally, I was planning on serving as BBQ Sandwiches but instead, we had mashed potatoes (Mark) and riced cauliflower (me) with it. Healthier options are always available!

We were able to pack some for lunch for 3 days and we had it for dinner another night so this does make a lot!
