Simple Side Grillin’ Dish

Every time I do this, I kick myself for forgetting how good it is.

And then, every time someone ask how it’s done, I kick myself for forgetting how EASY it is.

Yeah. Really.


Onions and Peppers …

Grilled in the grill pan. On the gas grill (although, I’m certain the charcoal grill would be awesome too!)

Cut your onion in half (root end to top) and then cut in thicker chunks. Toss in to a large bowl.

Deconstruct your peppers: push the stem down and pull out, shake out the seeds and cut in half (bottom to top) and again, cut in to thick chunks. Toss these in with the onions.

*Optional, if you like, you can add chunks of squash as well, which is what I’ve done here, but 90% of the time it’s just onions and peppers in my household!*

Grab some olive oil and add a bit to the bowl. No measuring allowed on this recipe. You don’t want them swimming in oil, but lightly coated.

Take some salt, pepper, and any other kind of seasoning that makes you happy and sprinkle over the veggies. I use my boirsion stuff which is a coarse ground seasoning mix, or a blend of salt, pepper, garlic powder and onion powder.

Let the bowl sit there on the counter. Stop by and say hi to the veggies as you do your thing in the kitchen.

When ready to cook, get a grill pan (you know the ones, open holes or grates?) and toss it on the grill to get hot and then toss the veggies in the pan. Leave them alone for a little bit and then go mix them up some … you want them to get a little ‘dark’ around the edges, but as I always tell Hubby, fine line between COLOR and BURNING so keep an eye on them once they start to get a little color.

Once the color is to your liking and ready, go ahead and remove them from the fire and serve. Yummy.

NOTES: I use whatever type of onions I have on hand. As for the peppers, I almost always have the sweet mini peppers from Costco so I just cut them in half and toss in. Of course, IF I have regular peppers, that’s what I use.

Also, I started using my Fire Wire Skewers to do this as well, however, the threading the pieces on is a little more time consuming … you can check that method out here.

There you have it, an easy make ahead side dish that can easily be reheated in a skillet while your protein is cooking, or it can used for a quick stirfry, or added to an omelet and so on!

The wine of the week is 19 Crimes 2016 Red Wine … interesting and tasty. It’s been a favorite of mine for about a year and when it goes on sale for $9.99, you better believe I pick up TWO bottles!

I want to give a HUGE thank you to those of you who came by and shared last week! There were some pretty interesting shares … pamecrement wrote a pretty moving post about God’s Sufficiency  … it really hit home this week and I think there was a quiet hand that had her share that this week.  And then there was the COOL cups by Hoopla Palooza … so very neat and some great cups were used! Makes me want to run to Bed Bath & Beyond to pick up some! AND then, over at Craft Beering we are showed how to make a Porter and Onion Gravy! With this new “soft food” diet that Mark is on, this will be golden! You bet it’s pinned and ready to give a whirl real soon!

Grocery Spending & Budgeting Week 4

Well. It’s been a crazy week.

A crazy month, actually.

So crazy, in fact, that I busted my budget and will be breaking the rules by borrowing BELOW instead of side to side.

Yup. I spent $270.00 last week. ON GROCERIES!

Sunday was Aldi $87.00

Wednesday, after Mark had a little procedure done and was put on a soft food diet (nothing more than oatmeal consistency!) I stopped at Publix to pick up some “soft foods” … you know, oatmeal (which thankfully was buy one get one free!), mashed potatoes, macaroni and cheese, cottage cheese, ice cream, etc. Doesn’t matter that he just doesn’t want to eat, period. Spent $105 there. Oops.

Then I stopped at Trader Joe’s for a few things and ended up spending $78 … for more macaroni & cheese and other “soft foods” … and Mark still doesn’t want to eat.


Fingers crossed this week will be better, news wise and budget wise!


All Time Favorite Seasoning

Ok, not everyone has a Trader Joe’s close by … I get that! We were one of those folks not that long ago, trust me!

I finally finished that bottle of Prosecco … that was a big bottle and it took me awhile!

I want to give a HUGE thank you for those of you who shared your links last week and the week before … being a fairly new person at this kind of party stuff, I’m learning and appreciate your comments and emails to assist me with little glitches 😉

There were some great shares last week: the Wine Bag which I would love to start getting crafty with; a homemade chicken noodle soup which hopefully I won’t need to be making anytime soon for comfort food when sick and of course, that hot dog chili sauce … we love chili dogs in this house and that looks perfect to top with!

Grocery Spending & Budgeting Week 2

I guess it helps the budget when you are really busy and just don’t have time to shop!

We listed some stuff up on Craigslist, Letgo and OfferUp … oh, and also Facebook Marketplace as we need to get rid of some furniture for the staging of the house … dang, that was really annoying.

Has anyone had good luck with these apps? I will say, OfferUp gave me more action but I think a lot of the people were bogus. And come on, if I’m asking $200 for something, don’t say you’ll take it for $50. It’s not like I want to make any money on this but I certainly didn’t want to give it away for FREE. If I did, I’d be donating it (which sadly, the pick up for any of those was 2 weeks out).

At the end of the day, we sold the dining room set, the guest bedroom set, Randi’s bedroom set, Randi’s desk and chair and what the kids coined “The Heidious Chair”

I don’t care what they said, it was a very comfortable chair and some dude is probably chilling in it with a can of Bud Light right this very moment.

Back to the purpose of this post. We took the kids (Jamie and Amanda) to Sweet Tomatoes on Wednesday for one last dinner before she heads North to her new job. That was my $50 misc. money out the door. Then I hit up McDonalds on my way to work on Friday morning and that was $6 from my grocery money. Then Hubby and I ended up going to Ocean’s Grille Friday night as we were hot, sweaty and starving after moving the one bedroom set and chair. $65 there from my grocery money. Hmmm….that left somewhere around $24.

I kept asking Hubby if we could go to the storage unit to drop some boxes off AND stop at Aldi on the way back … sure … but we never got around to it.

So?  I didn’t go grocery shop at all this past week but still spent that money on food and convenience.

I am ahead again this week but don’t worry, I did make a quick run to Aldi on Sunday morning which was a good thing! Check back next week!

*We’ve got lots of stuff going on around the house this week so things are going to be a little sporadic and potentially way out of character for us … staging of the house, Mark needs to get a last minute testing procedure done (which is freaking me out just a tad) and then of course, work stuff for me!

Grocery Spending and Budgeting

Welcome 2018!

I’m a little behind schedule as that grand baby decided to make an early appearance (12/29/17, 3 weeks ahead of schedule) and then brought along a few things we didn’t foresee (overnight stay for Bilirubin issues and then Randi in for postpartum pre-clampsia!) so I’ve basically missed the whole entire new year week. First New Year’s EVER sober …. imagine that!

Ok, so now that Baby Nolan is here, Princess Randi is safe and home again, and Matt is hopefully recovering from all the drama, I’m ready to get back on track here!

First things first!


Yup, that dreaded B word.

Hey, it’s everyone’s goal and much easier said than done. So this year, Effective 1/4/18 (as that’s when I finally made it back home) I wanted to set a budget:

$100 a week for food and consumables (cat food and paper towel are included here)
$50 for miscellaneous stuff (clothes, dinners out, spontaneous stuff)

Seriously, that should be obtainable, right?

Of course! But not so much in the real world.


So, we have a new listing agent (hello Sklar Team!) and we are staging the house which I am so proud of Mark to agree to this as he had a hard time agreeing to it which means we are back and forth to the storage unit, selling stuff on Craigslist which stinks and then trying to pawn stuff off to friends and family to no avail. Is our stuff really that crappy? Come on!

Anyways. Again. Back to the point here!

2018 week 1 total

My goal for 2018. $100 groceries per week. $50 for miscellaneous stuff. Borrow right to left but never down (next week, in the future, etc.)

See? Since I’m doing Sunday to Saturday, I’m ahead here! Wheee! Technically, that leftover money should be moved to a debt payment (credit card or appliances) but I’m holding it for now. Probably the wrong thing to do but hey, I get nervous when my bank account is low and Mark is asking for what I have available! Eek, it stinks being the one who gets a paycheck! 😉

Ok, ok, here’s the first week of 2018 played out … I did it!

Then we stopped at Office Depot to look at office furniture since Randi’s bedroom is being changed out to an office per the Stager Chic:

Originally, we just wanted to get some bubble wrap since the neon light in Florida room is being kicked to the curb (along with Mr. Wonderful!) and ended up looking at furniture and stuff.

Clock $17.99 (replaces the cheap crappy white one we have in the kitchen now)
Bubble Wrap $22.49 … sale was buy 2 get 1 free but like I told hubby, I don’t need that much bubble wrap to save $22. I mean, spend 50 to save $20 when it wasn’t needed? No thank you.

That Office Depot stop was a perfect example of how you can get sucked in to buying more than you need or want to “save a buck” or two. The savings isn’t worth it if you aren’t using it.  That receipt could read $75 instead!

Naked Pulled Pork

I say “naked” because, it’s without any BBQ Sauce …

And surprise, the 2nd time I made this, Mark ate it and said it was pretty damn good. Yeah, he said that about the green beans too … maybe his back pain was just making him super complacent?

What surprises me more than anything is that this humble hunk of pork can be transformed into something so freakin’ simple with just a few ingredients …

3 to 5 pound pork roast (I used a boneless pork butt this last time which makes me wonder, how is it boneless??)

1 tsp himalayian salt (the pink stuff)

half bottle of liquid smoke

1/2 cup water

Grab your crockpot.

Usually, I trim some of the fat, but this last time I didn’t. So I guess it works either way 😉 Trim or not, it’s up to you!

Grab a tsp or so of salt and sprinkle it all over everything and then massage the butt . Not a lot, you don’t want anyone to give you funny looks, you know?

Toss that bad boy in your crock pot, fat side up.

Add your half bottle of liquid smoke all around and over the top,

Pour in the 1/2 cup water around the sides.

Put the lid on the crockpot. Set on low for 10 hours or more.

Now. 10 hours could be fine. I’ve had times where it’s a big bone in hunk of meat and it takes 16 hours … you want the meat to basically fall apart when you stab it with a fork.

Once cooked, pull out of the crockpot and let it cool a little until you can touch. Once it’s cooled enough, pull it apart, making sure to pull the slimy fatty stuff and discard that.

Go ahead, take a taste. I think you will be surprised! If you feel it’s a little dry, add a little of the juice from the crockpot and add that to the meat.

Go ahead and serve this up with a side of green beans or whatever else you’d like … no need for a bun or bbq sauce which makes this a family friendly Whole30 meal!
