Happy Valentine’s Day everyone! I’m curious how many of you will be doing something special today, mid-week, to celebrate?

We won’t be … and tomorrow you will find out why when you come back to check out this awesome Potato & Cauliflower Soup I made over the weekend. The soup is great, the news, not so much.

Again, we had some awesome shares last week! Suzi at Just Simple Somethings shared her trip to Mackinac Island, Michigan … being a midwestern girl who has never crossed the bridge, I feel like I need to go now!

Then we had Sarah at Cook With Sara sharing how to make a Creme Brulee Cheesecake  in the Instant Pot! Uh, hello … I think I might need to give this a try!

And what about those 3 Workout Tips That Produce Results from Chris and Megan? Chris shares a lot of great tips and his preferred workout routine … I’ve bookmarked this to give a try with Mark in the near future!

Pressure Cooked Chicken Wings

Want to make chicken wings without a mess?

Wings? In the Instant Pot?? Count me in!

Ok, up front and center:  These only cook for FIVE minutes, BUT they do take time to come to pressure AND do their natural release.  And then you should really toss them under the broiler to give them some color.

So, yeah, they cook “fast” but not 5 minutes, eat and be done, ok?

I just hate when I see something that says FIVE MINUTES and then you see all the extra time involved 😉

Now, a little background on me … for years, I h. a. t. e. d. wings … like, ew, get those out of here.

Now? I LOVE THEM! So much so that I’m always making them different ways to find the most efficient and best results!

I think the pressure cooking thing is it. I mean, heck, the clean up is minimal … they certainly will NOT be splattering all over your oven …

Ready to do this?

Grab yourself a cup of water. And your wings, however many you’d like … I did 15 (!)

Put water in the bottom of the pot and insert that trivet.  We covered this before, go find it!

Season up your wings with whatever seasoning you’d like. I opted to use Mark’s Special Seasoning Mix. Be generous!

Add the wings on top of the trivet. The purpose of that there trivet is to keep the wings OUT of the water!  I did not stand them on end, and yes, they were touching each other, stacked up on each other. Whatever.

Put the lid on and lock it in place. Make sure your little knob is flipped back to “pressure”.

Hit manual and set for 5 minutes (high pressure).  Walk away and you’ll hear it beep in a few seconds and it will say “on”.

After about 10 minutes, you’ll hear it beep again and now the number 5 will be on the display and it will start counting down! Whee!!

After the 5 minutes are up, let it release on it’s own for about 10 minutes. NOW you can flip that knob forward and let the rest of the steam out.  Go ahead and turn on your broiler now (oh, hey, check open that oven door and look inside BEFORE you turn on the broiler, ok? I’ve had a pizza box smoking before! Whoops)

Take the lid off carefully, it’s HOT!  Remove the wings to a parchment paper lined baking tray. I just re-used the tray that I had roasted some broccoli on earlier for meal prep work! No need to waste resources!

See how pale they are? THAT’S why you want to broil them a little!

If you’d like, brush some sauce on those babies.

I opted to broil mine naked and THEN added sauce on afterwards … I’m not a big sticky sauce kind of girl, you know?

These were really good and I think may be my new way to make them forever! There’s minimal fuss and mess to deal with!  Go ahead and give them a try! Up next will be the salt & vinegar wings … or maybe lemon pepper wings … or maybe ranch wings! The possibilities are endless!

Who’s ready to Party??!!

This week I’m sharing a pic of these awesome wings that I made in the Instant Pot on Super Bowl Sunday … it was just me and Jamie at the house as I really was not in the mood to be celebrating … can I just tell you how awesome these are? I’ll share how I did it on Thursday so come back and check it out!  Mark’s up in Indiana for the week and I’m excited to make them for him!

Again, we had some great shares last week! Becoming Alice shared her Vegan/Dairy Free Strawberry Muesli Parfait … I have everything except the sugar but can use coconut sugar if necessary because I know how to improvise!

And then we had Trick and Treat sharing this awesome Easy Sour Cream Cake … I want to try this with plain greek yogurt! Yumm!!

And lastly, we all want to save a little more money, right? Saving Sarah shared 32 Awesome Ways to Save Money in the Kitchen. Uhm, with 32 tips, I’m sure there’s one or even two that would benefit all of us!

Pots O’ Chocolate Gold

This is an OLD recipe by our standards … I made it a few years ago for Valentine’s Day to share with some friends when we had a little surf and turf dinner …

I had this recipe tagged in my cookbook since Christmas morning. It was one of the FIRST recipes I flagged when I opened the box and saw the book! Then I got the weekly email update from Michelle and said, heck, I should try this … so I rooted around in my chocolate stash and had exactly 6 1.2 ounce bars of bittersweet 72% cocoa bars … score! That made everything I needed available in house which made me decide that I needed to make it right then and there!!

Who’s ready to Party??!!

This week I’m sharing a pic of Sweet Little One, aka Kitten, Witch Cat, etc. She’s not really sweet unless she wants something. The rest of the time she’s “No Touchy” and can be a little nippy and swatty … hence the nick name of Witch Cat as well. But she sure is pretty, isn’t she? Disregard her nose. She’s constantly getting in to stuff outside …

Again, we had some great shares last week! There was the Wynwood Walls which is pretty cool … not that far from my backyard and yet I’ve never been there … now I want to take a road trip!

Then there was the French Onion Soup … I might have to put that on the menu as we do have a little cold front coming in again!

And with all the stuff going on around here, we might need to make this Chicken and Gravy just for the comfort food factor!

Simple Side Grillin’ Dish

Every time I do this, I kick myself for forgetting how good it is.

And then, every time someone ask how it’s done, I kick myself for forgetting how EASY it is.

Yeah. Really.

GRILLED VEGETABLES

Onions and Peppers …

Grilled in the grill pan. On the gas grill (although, I’m certain the charcoal grill would be awesome too!)

Cut your onion in half (root end to top) and then cut in thicker chunks. Toss in to a large bowl.

Deconstruct your peppers: push the stem down and pull out, shake out the seeds and cut in half (bottom to top) and again, cut in to thick chunks. Toss these in with the onions.

*Optional, if you like, you can add chunks of squash as well, which is what I’ve done here, but 90% of the time it’s just onions and peppers in my household!*

Grab some olive oil and add a bit to the bowl. No measuring allowed on this recipe. You don’t want them swimming in oil, but lightly coated.

Take some salt, pepper, and any other kind of seasoning that makes you happy and sprinkle over the veggies. I use my boirsion stuff which is a coarse ground seasoning mix, or a blend of salt, pepper, garlic powder and onion powder.

Let the bowl sit there on the counter. Stop by and say hi to the veggies as you do your thing in the kitchen.

When ready to cook, get a grill pan (you know the ones, open holes or grates?) and toss it on the grill to get hot and then toss the veggies in the pan. Leave them alone for a little bit and then go mix them up some … you want them to get a little ‘dark’ around the edges, but as I always tell Hubby, fine line between COLOR and BURNING so keep an eye on them once they start to get a little color.

Once the color is to your liking and ready, go ahead and remove them from the fire and serve. Yummy.

NOTES: I use whatever type of onions I have on hand. As for the peppers, I almost always have the sweet mini peppers from Costco so I just cut them in half and toss in. Of course, IF I have regular peppers, that’s what I use.

Also, I started using my Fire Wire Skewers to do this as well, however, the threading the pieces on is a little more time consuming … you can check that method out here.

There you have it, an easy make ahead side dish that can easily be reheated in a skillet while your protein is cooking, or it can used for a quick stirfry, or added to an omelet and so on!

The wine of the week is 19 Crimes 2016 Red Wine … interesting and tasty. It’s been a favorite of mine for about a year and when it goes on sale for $9.99, you better believe I pick up TWO bottles!

I want to give a HUGE thank you to those of you who came by and shared last week! There were some pretty interesting shares … pamecrement wrote a pretty moving post about God’s Sufficiency  … it really hit home this week and I think there was a quiet hand that had her share that this week.  And then there was the COOL cups by Hoopla Palooza … so very neat and some great cups were used! Makes me want to run to Bed Bath & Beyond to pick up some! AND then, over at Craft Beering we are showed how to make a Porter and Onion Gravy! With this new “soft food” diet that Mark is on, this will be golden! You bet it’s pinned and ready to give a whirl real soon!

Grocery Spending & Budgeting Week 4

Well. It’s been a crazy week.

A crazy month, actually.

So crazy, in fact, that I busted my budget and will be breaking the rules by borrowing BELOW instead of side to side.

Yup. I spent $270.00 last week. ON GROCERIES!

Sunday was Aldi $87.00

Wednesday, after Mark had a little procedure done and was put on a soft food diet (nothing more than oatmeal consistency!) I stopped at Publix to pick up some “soft foods” … you know, oatmeal (which thankfully was buy one get one free!), mashed potatoes, macaroni and cheese, cottage cheese, ice cream, etc. Doesn’t matter that he just doesn’t want to eat, period. Spent $105 there. Oops.

Then I stopped at Trader Joe’s for a few things and ended up spending $78 … for more macaroni & cheese and other “soft foods” … and Mark still doesn’t want to eat.

Ugh.

Fingers crossed this week will be better, news wise and budget wise!

 

All Time Favorite Seasoning

Ok, not everyone has a Trader Joe’s close by … I get that! We were one of those folks not that long ago, trust me!

So today, I’m sharing one of my all time favorite seasonings that they sell … and NO, it’s not the Everything Bagel Seasoning …

Ok, so being a “make it yourself” kind of girl, I don’t even want to try and do that … this is so good and really, well worth the $1.99.

So if you have a Trader Joe’s, run and buy this … fit it in to your budget (ditch that bag of chips, you don’t need those!) … if you do NOT have a Trader Joe’s, leave me a comment and maybe, just maybe, a little fairy will send you an email for additional information to ship you a little jar … just because 😉

Hey! Are you ready for another Party??

I finally finished that bottle of Prosecco … that was a big bottle and it took me awhile!

I want to give a HUGE thank you for those of you who shared your links last week and the week before … being a fairly new person at this kind of party stuff, I’m learning and appreciate your comments and emails to assist me with little glitches 😉

There were some great shares last week: the Wine Bag which I would love to start getting crafty with; a homemade chicken noodle soup which hopefully I won’t need to be making anytime soon for comfort food when sick and of course, that hot dog chili sauce … we love chili dogs in this house and that looks perfect to top with!
