Mandarin Orange Chicken Salad

Here’s a much healthier version than Wendy’s Mandarin Chicken Salad!

Now that we are officially moved in to the #smallcondo it’s time to get back on a routine, don’t you think? All that eating out and food waste have really taken a toll on us and we need to get back on track … so here we go, ONE of my favorite salads!

I used to love to get the Mandarin Chicken Salad from Wendy’s back in the day … I thought I was being super healthy, you know?

Of course, that was before I learned about reading labels and such … amazing how something so “healthy” could be so very bad for you. Not to mention, they also discontinued this particular salad a while ago … so sad!

When I came across this recipe back in 2015 I was so excited to give it a try ‚Ķ I was so glad I did! Talk about an awesome, flavorful salad … and even better, when I opted to make it at the last minute, I had EVERYTHING on hand so it fit the bill!

Here’s what you need:

2 boneless/skinless chicken breasts

head of lettuce (romaine) chopped in bite size pieces

1 red pepper, sliced and chopped in bite size pieces

1 large carrot, coarsely shredded

1/4 of a small red cabbage head, sliced thin

15 oz can of mandarin oranges, drained

4 green onions, sliced thin

1/4 cup sliced almonds, lightly toasted

and then … the dressing:

1/3 c honey

3 tbs vinegar

2 tbs¬† mayo (bonus points if you make your own! Go ahead and try, it’s easy!)

1 tsp sesame oil

1/2 tsp salt

Ready? Season your chicken with salt and pepper (and oh, what the heck, garlic POWDER if you have). Bake in the oven at 350 for about 30 minutes or so, til cooked through. Remove and allow to cool. Once cool, go ahead and cut into bite size pieces. Alternatively, if you want to be “pretty” you can slice thinly but then you will still need to cut when you are eating, so I say, just cut into bite size pieces ūüėČ

Add all the veggies, oranges and almonds to a large bowl. Top with the chicken.

Whisk the honey, vinegar, mayo, oil and salt in small bowl and drizzle over the salad.

Better yet, toss all in a canning jar, cap it tightly, and shake it like you mean it. THEN drizzle over the salad, toss to coat and serve up.

BLT Inspired Chicken Salad

This is a super yummy salad that is Whole30 Compliant, Paleo, Grain Free, Dairy Free, Gluten Free and all that other stuff BUT so stinkin’ good! I promise, you will be so very glad you gave it a try!

Chicken Caesar Salad with Pasta

This is a pretty awesome salad that can be made with leftovers!

For a while there, I would make this salad for lunch at least TWICE a week! It’s so simple and was so worth it!

And now that summertime is here in full force, it’s time to bring out the dinner worthy salads, right?? RIGHT!

So yeah, this could be TWO servings, but I will admit, I’ve made this all for ME, ME, ME. Selfish? Nah? Piggy … well, maybe, a little bit but geesh, it’s healthy, right??

Here’s what you need to do!

1 head of romaine lettuce, bottom cut rinsed well and chopped

1 grilled chicken breast (leftovers are perfect for this!)

leftover pasta, I prefer to use a thicker shell type noodle

sprinkle of fresh parmesan (from that pasta dish the other night!)

Caesar dressing … I’ve been tied to Ken’s Caesar dressing for quite a few years

Croutons if desired

This is so easy.

Dump everything in a large bowl. Mix well to combine and coat everything.

Serve up and enjoy!

Thai Style Shrimp Salad

This is a FAVORITE of mine and I make it whenever the Jamie is not around and Randi is … not as often as I’d like since she is now a married woman and a mommy of a 5 month old sweet baby boy living TWO HOURS west of us!

Just Like Olive Garden Salad

Stay home tonight and make yourself a salad just like Olive Garden!

It’s been a LONG time since I’ve been inside an Olive Garden restaurant … the unlimited salad and breadsticks used to always get me … I am a sucker for warm, soft bread, you know? Oh, and I just love that salad too … the dressing, luckily, is easy to replicate, as is the salad itself.

Quick! Does anyone else have these really cool metal bowls from, probably the mid 1960’s early 1970’s? My mother in law had a ton and when she passed away, I snagged a few to bring home … my all time favorite salad bowls!

The other good news about this salad? Saving you moola … as in a minimum of $20 … like I said, been a LONG time since I’ve been to Olive Garden but I do remember that a dinner entree was at least $12.99 and that was a few years ago … so figure two people, easily $25 AND then most likely, a beverage (or two) and there you have it … el cheapo night out got a little more expensive …

Cobb Salads

Somedays, all I want to do is head out to¬†Sweet Tomatoes¬†and have an all you can eat salad buffet with unlimited soups and a few other starchy things on the side. I never opt for dessert because I’m usually a stuffed pig by the time everyone is ready to hit the yogurt bar. ¬†No thank you. ¬†Mark and Jamie, on the other hand, are all about the frozen yogurt and such …

They do NOT serve Cobb Salads there but whenever I get around to making this, I’m always like, YUMMMM, we should do this more often!
