Black Bean Quesadillas

A quick meatless recipe that will satisfy your crowd!


The world’s simplest recipe!  I mean think about it, you can make just about ANYTHING in a quesadilla!

So today, I’m going to share one of our favorites … and to make it even better? It’s meat free which can equate to FRUGAL!


Oh. Sorry.  That didn’t make you excited? Would it be better if I said it was Vegetarian? You won’t find a whole lot of those kind of recipes here but this is one of the few!

NOTE: these are OLD pictures but you can bet your booty that as soon as we are in the condo I’ll be sharing NEW and IMPROVED photos! TWO WEEKS!!! They say we can start moving in ONE week but I say TWO!

I first made these YEARS ago and I felt the need to bring them out again and introduce them to YOU!

Let’s get cooking!

2 cans of black beans, drained

2 tsp cumin (I would lean towards 3 tsp aka 1 tbs)

1 bag of coleslaw mix

1 lime

2 tsp olive or avocado oil

1/4 cup of cheese of choice (I’ve used laughing cow Queso & Chipolte AND I’ve used jarred queso, cheddar, etc. whichever you prefer!)

8 tortillas (Mark does not like corn so we always use flour)

finely chopped cilantro

chopped tomatoes (totally optional and not used in these pics)

Dump the drained beans in to a bowl with the cumin and lightly mash them. Eek, that’s an awful picture!

In another LARGE bowl juice the lime and zest a little bit and add the oil. Whisk to mix and then dump in the coleslaw mixture. Toss to coat well.

Grab a large skillet (or griddle if you have!) and put over medium high heat.

Lay your tortilla on the dry skillet and add your cheese to 1/2 of the tortilla and 1/4 c or so of the beans.

Fold tortilla in half and cook til brown on one side. Flip carefully to brown other side.

Move these to a cutting board while you cook the rest!

When done cooking and ready to serve, gently open the shells and add the cabbage mixture and garnish with the fresh cilantro and tomatoes (if using).

Serve up and enjoy!
