Cheesy Ham & Tater Casserole
Quick and Easy Casserole for any day or night!
Normally, I shy away from anything with the word CASSEROLE in the title.
Sorry, it’s just me. Not YOU at all. I just have a hangup with that word.
Casserole: Type of food: A casserole is a large, deep pan used both in the oven and as a serving vessel. The word is also used for the food cooked and served in such a vessel, with the cookware itself called a casserole dish or… en.wikipedia.org
Well, that just doesn’t do anything for me!
BUT
This dish? I had everything on hand. Only thing I picked up was the Creamy Potato Soup … and only because I knew if I never got around to making this recipe, at least Hubby would have another variety of soup to choose from on his off days … because, yes, even though I don’t talk about it much, there are still bad days from the cancer.
This was a last-minute dish on a Sunday night as we were originally looking to make some grilled cheese sandwiches and soup … BUT we had no bread (we were out for a mini weekend trip to see Kid Rock and hadn’t been to the store) … so fidgeting and I’m like, well, heck, it will take 45 minutes to 1 hour but why not? So I did it!
Here’s what you need:
1 1/2 bags of shredded hash browns (my bags were 20 ounces and Trader Joe’s and Aldi)
3/4 pound cooked ham, chopped. I used black forest deli ham from Trader Joe’s
2 cups (or 1 8 oz bag) of shredded cheddar cheese (Aldi)
1 16 oz container of sour cream (Breakstone, Publix)
2 cans of creamy potato soup (Campbell, Publix)
5 oz container shredded parmesan cheese (Aldi)
Salt and Pepper and any other seasoning you’d like (I used our Seasoning Blend)
Spray a large casserole dish with nonstick spray.
Grab the largest bowl you have and toss in all your ingredients, EXCEPT the parmesan cheese. In hindsight, I would suggest laying the hash browns out in the dish and them mix the rest of the ingredients together as it’s hard as heck to mix them frozen hash browns!
Dump everything in your ‘casserole’ dish and smooth out. Top with the parmesan cheese and bake for 45 minutes to an hour at 375. I will tell you, this temporary home has an OLD but kick butt oven 😉 Not to mention, awesome ‘casserole’ dishes!
Once the dish is golden and bubbly, remove from the oven. Let the dish sit for 10 minutes or so as it will be HOT. Then serve up!
