Citrusy is just not a word. What’s up with that?
So this here recipe? It’s Super Simple. Technically, it’s equal parts of everything. 2, 2, and 2 is how I went for this round!
Like, go make it TODAY!
Not that I would ever tell you to go make something pronto but this, you really should!
2 pounds or more of chicken (legs, thighs, etc)
2 oranges
2 limes
2 lemons
1/4 cup of avocado (or olive) oil
1/2 packet of taco seasoning
3 cloves of garlic, chopped
Zest one lime, lemon and orange. Juice all 6 fruits.
Toss everything in a ziploc, mix the chicken around so it’s somewhat evenly coated. Lay flat on a tray and put in the refrigerator for at least 2 hours up to 2 days.
I opted to make this in the crockpot for simplicity (and less hands on). BUT you could easily make this on the grill by baking it first in a tin pan in the oven to start the cooking process and THEN finish it up on the grill. The only problem with bone and skin on chicken on the grill is major flare ups unless you are cooking on indirect heat.
Toss in the crockpot on low for 6 hours. When done, finish up on the grill (the majority of the fat will be cooked off, thereby reducing the flare ups but you still need to keep an eye on it!
Of course, I DID have a flare up … and if I could find my pictures to share my Instant Pot Rice you would see the really charred pieces hence no finished pics … this move has really messed up my organization!
Serve up with some black beans and rice and some toasted cuban bread and call it a day!
