Ok, let’s get one thing straight … these are NOT Italian Potatoes in the sense that anyone Italian grandmother would be making for Sunday dinner.
There. I put it out there …
They are, however, an awesome, easy side dish to make if you are grilling for a Sunday dinner.
So there. I put that out there as well!
These are super easy to make and I’m quite certain you have everything on hand to go make them TONIGHT!
5 potatoes, scrubbed clean and cut in quarters or large, 2 bite size chunks
1/2 to full bottle of italian dressing
Anyone who knows me knows that I am not a big fan of bottled dressing. I prefer to make my own … but Mark on the other hand, LOVES bottled stuff so yeah, we have this on hand generally.
First up, you gotta boil those taters for about 10 minutes. You don’t want them cooked all the way through, otherwise, they will fall apart on the grill!
Drain them well and toss them in a large bowl.
Pour a generous amount of dressing over the still warm potatoes and toss them to coat well. You will want to let them sit for at least 30 minutes to just chill and marinate.
When ready to finish up, fire up your grill to high heat and lay them out on the hot grill. Let them cook for about 5 minutes and then start turning them to get them charred. Don’t wash that bowl OR empty out the leftover dressing in the bottom!
Mine are sharing space with the chicken. I know that does NOT look like chicken but it is!
Once they have lovely grill marks and smell delicious, put them back in that bowl and toss with whatever leftover dressing is in the bowl.
Serve up and enjoy!!
