For years, we would make this dip for every gathering, every weekend.
It’s crazy easy to make and always a crowd pleaser. It’s been a while since I’ve made it (December 2017) and I’m looking forward to our next get together to throw it together again!
It’s a very simple recipe, and really, you can make so many modifications to make it YOURS! We’ve even added chopped avocados when they were dirt cheap in the past!
Today, I’m just going to share with you the original way we make it 95% of the time with simple ingredients!
1 can of refried beans (we are digging the Trader Joe’s Refried Black Beans with jalapeno!)
1 jar of salsa (shelf stable)
1 16 oz container of sour cream
8 oz shredded cheese (I prefer fine shred)
sliced green onions
First up: DRAIN THAT SALSA! Yup … that keeps the dip from getting all loose and watery. You may need to tap into a 2nd jar of salsa if it’s really watery.
Spread the refried beans in a shallow dish.
Dump the drained salsa on the beans and spread in an even layer.
Add dollops of sour cream over the salsa and spread out as evenly as you can. Don’t get overly upset if the salsa and sour cream do not cooperate and become friends …. because …
CHEESE!
Sprinkle your cheese all over, covering up all the sour cream and salsa. Garnish with your sliced green onions, cover the dish and let it chill for a hour or so in the fridge.
When it’s time, serve up with some tortilla chips and proceed to Party!
